This is a Q&A about the handling and care of our products that we received from our customers.

About the kitchen knife that wants to . Please take a look at the handling and maintenance of full-fledged kitchen knives that are not industrial products, such as forged knives.

Q. "Can I use a simple knife sharpener (sharpener) instead of a sharpening stone? I have a sharpening stone, but I'm worried about its maintenance."

A. I confirmed with the craftsman.

We do not recommend using a simple knife sharpener. It seems better to think of the simple knife sharpener as for mass-produced stainless steel knives. In the case of good knives, there are many cases where the blade is rather damaged, so basically it is better not to use it.

It would be best if you could sharpen it by yourself, but I think it is quite difficult.
In Japan, you can ask for sharpening at department stores and hardware stores, so if you want to leave it to a professional, we recommend bringing it to a nearby shop that offers sharpening. In addition, Shimada Hamono Seisakusho, which produced the blades, can also sharpen them (details are listed on the product page).

As with any kitchen knife, it cannot be used forever without maintenance. For those who choose this forged knife, we do not assume that you will need to replace it, and we would like you to use it for a long time.

We recommend that you find a shop that handles sharpening, such as the department stores and hardware stores mentioned above, and bring it in if it becomes dull or you are concerned about it.
Alternatively, it may be a good idea to sharpen it yourself as much as possible on a daily basis, but if rust or maintenance is clearly required, bring it to a shop.
