A small kitchen knife made by a Yamagata cutlery craftsman. Unlike mass-produced kitchen knives, it is a so-called blacksmith's work, and it is a hammered knife that is hammered and shaped one by one.

A uniquely shaped small knife with a rounded tip is now complete.

It is a product made with "Everyone's Tool #02".
All product development stories are open to the public, from interview tours of the factory, planning and development meetings, and presentations using products. For more information on the production process, please see the link below.

Kitchen Knife (Everyone's Tool #02)

When thinking about this knife, I wondered how I could use a knife made from a hammered knife in my daily life. That is the starting point.
Most likely, you are using a so-called santoku knife (culture knife) as your main knife. If you like cooking, you may have several other bottles and use them properly.
Apart from the Santoku knife, I thought of creating a "second small knife that can be used every day" that is easy to use and has many appearances.

The details are reported in the link above, but as we proceeded with thinking about the scenes in which the knife would be used, we received opinions such as "Scenes where it is difficult to use a Santoku knife" → "Peeling small vegetables such as potatoes", and more concretely. The scene has been decided.

That's how this "Tagaru Knife" was completed. "Tagaru" means "carry" in the Yamagata dialect. This is the kind of knife that you want to carry around and use outside the home, such as outdoors and in cooking classes. It is characterized by its small size and rounded shape. It is easy to use for outdoor use, daily cooking at home, and for small tasks such as peeling fruit.

▼ Small size and shape that can turn in a small radius ・Those that are difficult to handle with large knives, such as the small Santoku knives called petty knives. Peeling small spherical vegetables and fruits, including taro, potatoes, and apples. I thought about the size and shape of the blade that plays an active role here.

▼Shape that is not scary ・Round blade shape In outdoor cooking such as cooking imoni, camping and barbecue, we often work together in a shared space. It is easy to use even in narrow spaces and places with many people.

▼Easy to carry ・Small size and round cutting edge. A special case is also available.
Carrying cutlery and kitchen knives is scary even while moving. With a rounded tip, this knife is easy to carry even when you are out and about.

There are two types of cases for knives made of cowhide that are sold separately. If you wish, you can choose from the options when ordering.

▼Easy to clean ・Since the blade is straight, it is easy to sharpen, just like a regular kitchen knife. I think there are many people who go to sharpeners, but we have devised ways to make sharpening easier for those who continue to sharpen their own knives.

In addition, since this knife is for everyday use, it is made with a double edge instead of a single edge like a Japanese knife. It has a symmetrical blade and can be used by both right-handed and left-handed people.

We use high-quality steel and stainless steel to prevent rust. For rust, we recommend using a commercially available eraser-type rust remover. Easy to remove without damaging the blade. Regarding sharpening, in addition to the sharpening service near your home, Shimada Hamono Seisakusho also handles sharpening, so please feel free to contact us.
